Make like this

Cut the reduced seeds and light eggplant into half-and-half-inch thick slices. After adding salt and turmeric, wrap it well and soak it for 10 to 15 minutes. Eggplant pieces will look somewhat wet. Press the water between the palms and remove the water. Heat the oil in the pan and deep fry these slices in it. Serve them with roti, paratha and chutney. The brinjals are also made like pakoras in addition to the bajra, but for that, deep frying the brinjals is done by deep frying them with a favorite spice mixed gram flour solution. These also look good with rice, roti or paratha.

Chorkha of Bihar

What do you need

Brinjal – 1 filling, Potato – 4-5, Tomato – 2, Green Chilli – 2 finely chopped, Onion – 2 very finely chopped, Salt – As per taste, Green Coriander chopped finely, Ginger – small piece, Keesa Garlic – 1 tsp finely chopped, mustard oil – 2-3 tsp, lemon – 1.

Made like this

Fry the brinjals, potatoes and tomatoes on the heat and mash them well. Add the onions and green chilies to it and mix. Add salt, lemon juice and 2 tsp oil. Heat some oil in a pot of water and add ginger-garlic to it and make it golden. Add a sprinkle to it. Serve hot by adding green coriander to it. This chokha tastes good not only with litti, but also with roti.

Kansar of gujrat

What do you need

Wheat flour (coarsely ground) – 1 cup, water – 3 cups, jaggery – 1/2 cup, sugar powder – 1/2 cup, ghee – 1/2 cup, dry fruits – 1/4 cup, rose petals – A little bit.

Make like this

Heat water in a large pot and add jaggery to it and boil until bubbles rise. Take flour in a plate and add four small spoons of ghee to it. Add jaggery by adding a little flour. Mix it well so that it will become like halwa. Cook it on a slow flame for four minutes in the cooker for four minutes. Turn off the heat and take it out in a plate and cool it down a bit. Put this kansar in a mixer jar and grind it slightly. Heat the ghee in the pan and add powdered kansar and sugar powder to it and mix. Serve garnished with dry fruits and rose petals on a plate.

Fada Lapsi

What do you need

Oatmeal – 1 cup, ghee – 1/2 cup, sugar – 1 cup, water – 2 ½ cups, cardamom – 1 tsp, cardamom granular powder – 1/2 tsp, fennel – 3 tsp, dry fruits – 2 Small spoon.

Make like this

Heat the ghee in the pan. Add oatmeal to it and bake until it becomes golden. Now add fennel. Boil water and add to the porridge and mix while stirring for two minutes. Add sugar to it. In a vessel, mix Dalai mixture, chopped dry fruits and cardamom powder. Then put it in the pot in the cooker and cook for 20 minutes. Dalai water will dry up. Serve cold and chopped nuts.
